Mozzarella balls

A cheese made from stretched curd.

During the production process, the curd is left to rest for several hours to allow the enzymes to work. It is then cut into slices and immersed in salted water at a heat of 90 degrees. The mozzarella is shaped into balls by hand, before being cooled and packaged.
